The Stir Down with Steve the Bartender - Issue 011
It's that time of year when everyone is making fall and Halloween cocktails.. alas, I've given it a miss this year as life seems to be getting in the way of filming. So much for a regular filming schedule... π

The Lion's Tail would have to be the ideal fall cocktail for me and it's really easy to make. Imagine a whiskey sour with a splash of pimento dram (aka allspice liqueur). Pimento berries boast flavours of clove, nutmeg, star anise, fennel, black pepper and cinnamon all rolled into one, making it a great fall cocktail ingredient.

π₯ TIP OF THE WEEK
Egg whites in cocktails - whilst I do encourage people to try using fresh egg whites in your cocktails for an unbeatable texture, I completely understand that many people don't like the idea of consuming raw egg in their drinks. Alas, there are now plenty of alternative options that make it easier to prepare drinks en masse as well as being cleaner to work with.
Foaming 'bitters' - a few drops in your shaker is all you need to create a nicely structured foam. Often made from saponin (a plant-based extract). Some well known brands include Wonderfoam, Miraculous Foamer and Fee Foam.
Aquafaba - essentially just chickpea juice. So go make some hummus and save the leftover juice in the can for your cocktails. Keep in mind it will only last a week in the fridge though π buy chickpeas.
Super syrup - coined by the legendary Kevin Kos and made with methylcellulose, a chemical compound taken from vegetable cellulose. This is a sugar syrup with a foaming agent which means you can knock out whiskey sours for large groups very quickly and easily π how to make super syrup.
Gum syrup - gum arabic is a natural emulsifier. It will increase the viscosity of your drink and improve the foam compared to using simple syrup BUT it won't replicate a thick foam like the above options. A great syrup to make beautifully textured cocktails but not designed to replicate a thick foam π buy gum syrup.
I'm keeping it short today! I've got a tonne of voice overs to do for the videos for the book which is released in less than two weeks! Preorder a copy.
Cheers,
Steve the Bartender
