New Orleans is home to countless classic cocktails including the Sazerac, Hurricane, Ramos Gin Fizz, Vieux Carre and the Brandy Crusta!

One lesser known cocktail from New Orleans is the La Louisiane. It shares many similarities to the Vieux Carre so you should definitely try it (if you love the Vieux Carre that is!). It's spirit forward, boozy and also features rye whiskey, sweet vermouth and benedictine.

🔥 TIP OF THE WEEK

Oleo saccharum is a syrup made using the hygroscopic properties of sugar (it has the ability to absorb moisture). By adding sugar to lemon peels it slowly extracts the oils from the peel, resulting in a sweet, citrusy and flavourful syrup. If you want to hasten and improve the process you can use a vacuum sealer.

Whilst citrus peel is most commonly used with this technique, it's also great for minimising waste from ingredients that ordinarily get thrown away. Try using pineapple or watermelon rind, banana skin or even spent coffee ground - you'll be surprised at the amount of flavour that can be achieved.

Pro tip - incorporate a spice or herb to make more complex flavour combinations for your syrups.
